Ingredients

The following ingredients have 7 Servings
  • 4 tablespoons olive oil (, divided)
  • 6-8 Russet Potatoes (, washed, scrubbed and dried)
  • salt (, to taste)
  • 1/2 pound lean ground turkey
  • salt and fresh ground pepper (, to taste)
  • 1 yellow onion (, sliced)
  • 1 garlic clove (, finely chopped)
  • 10 ounces Diced Tomatoes & Green Chilies
  • 1 cup canned/frozen corn
  • 1 cup canned black beans
  • 1 teaspoon ground cumin (, or to taste)
  • 1/2 teaspoon chili powder (, or to taste)
  • 1/4 teaspoon cayenne pepper
  • salt and fresh ground pepper (, to taste)
  • 1 tablespoon chopped parsley ((you can also use cilantro))
  • 1-1/2 cups shredded Mild Cheddar Cheese

  • Avocado Slices
  • Tomatoes
  • Tortilla Strips

Instruction

  • Preheat oven to 350F.
  • Using a fork, poke deep holes all around each potato.
  • Place potatoes in a baking dish and drizzle with 1 tablespoon olive oil and sprinkle with salt.
  • Bake for 1 hour and 15 minutes, or until skin is crisp and flesh feels soft.
