Ingredients
The following ingredients have 7 Servings
- 4 tablespoons olive oil (, divided)
- 6-8 Russet Potatoes (, washed, scrubbed and dried)
- salt (, to taste)
- 1/2 pound lean ground turkey
- salt and fresh ground pepper (, to taste)
- 1 yellow onion (, sliced)
- 1 garlic clove (, finely chopped)
- 10 ounces Diced Tomatoes & Green Chilies
- 1 cup canned/frozen corn
- 1 cup canned black beans
- 1 teaspoon ground cumin (, or to taste)
- 1/2 teaspoon chili powder (, or to taste)
- 1/4 teaspoon cayenne pepper
- salt and fresh ground pepper (, to taste)
- 1 tablespoon chopped parsley ((you can also use cilantro))
- 1-1/2 cups shredded Mild Cheddar Cheese
- Optional Toppings:
- Avocado Slices
- Tomatoes
- Tortilla Strips
Instruction
- Preheat oven to 350F.
- Using a fork, poke deep holes all around each potato.
- Place potatoes in a baking dish and drizzle with 1 tablespoon olive oil and sprinkle with salt.
- Bake for 1 hour and 15 minutes, or until skin is crisp and flesh feels soft.
