Ingredients
The following ingredients have 8 Servings
- 1 tbsp. oil ((plus extra for oiling quiche pan))
- ½ cup minced red onion
- ½ cup minced red bell peppers
- 8 large eggs ((lightly beaten))
- 1 cup chopped tomatoes
- 1 cup black beans
- 4 oz. can green chilis
- 2 tsp. garlic granules ((or garlic powder))
- 1 tsp. ground cumin
- ½ tsp. chili powder
- ½ tsp. salt
- ½ tsp ground black pepper
- ½ cup fresh, chopped cilantro ((optional))
Instruction
- Preheat oven to 400 F. and heat oil in a large, cast iron skillet. Sauté onion and bell pepper in oil until onion is translucent. Allow to cool to a touchable temperature.
- While the veggies cool, add all other ingredients to a large mixing bowl and whisk well to combine.
- Pour the egg over the veggies in the skillet and stir briefly. Bake for 20 -25 minutes.
- Cool slightly, slice, garnish and serve.
