Ingredients

The following ingredients have 8 Servings
  • 1 tbsp. oil ((plus extra for oiling quiche pan))
  • ½ cup minced red onion
  • ½ cup minced red bell peppers
  • 8 large eggs ((lightly beaten))
  • 1 cup chopped tomatoes
  • 1 cup black beans
  • 4 oz. can green chilis
  • 2 tsp. garlic granules ((or garlic powder))
  • 1 tsp. ground cumin
  • ½ tsp. chili powder
  • ½ tsp. salt
  • ½ tsp ground black pepper
  • ½ cup fresh, chopped cilantro ((optional))

Instruction

  • Preheat oven to 400 F. and heat oil in a large, cast iron skillet. Sauté onion and bell pepper in oil until onion is translucent. Allow to cool to a touchable temperature.
  • While the veggies cool, add all other ingredients to a large mixing bowl and whisk well to combine.
  • Pour the egg over the veggies in the skillet and stir briefly. Bake for 20 -25 minutes.
  • Cool slightly, slice, garnish and serve.
