Ingredients

The following ingredients have 6 Servings
  • 2 tablespoons olive oil
  • 1/2 large onion (diced)
  • 1 small sweet potato (peeled and cubed, 1/4 inch pieces)
  • 2 hot Italian sausages
  • 1 small zucchini
  • 1 ear sweet corn (kernels removed)
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • garlic salt & pepper (to taste)
  • 2 cups leftover cooked quinoa
  • 6 butter lettuce leaves (washed and dried)
  • cilantro and red onion (for garnish)

Instruction

  • Place large skillet over medium heat. Sauté onion and sweet potato in olive oil.
  • Remove sausage from casings and place into pan, breaking it up as it cooks. Once sausage is thoroughly cooked, stir in zucchini, corn and spices.
  • Cook another 3-4 minutes. Add in the quinoa to warm it through. Spoon into lettuce leaves, top with cilantro and red onion if desired and serve.
