Ingredients
The following ingredients have 4 Servings
- 1/2 cup uncooked quinoa
- 1/2 can black beans (drained and rinsed)
- 1 cup corn
- 1 cup red pepper (finely chopped)
- 1/3 cup green onions (finely chopped)
- 1/2 cup fresh cilantro (chopped)
- 2 tablespoons olive oil
- 1 teaspoon cumin
- 1 garlic clove (minced)
- juice from 1 lime
Instruction
- Cook quinoa according to package directions.
- Combine black beans, corn, red peppers, green onions and cilantro in a large bowl.
- Add cooled quinoa to the vegetable mixture.
- Whisk dressing ingredients together in a small bowl then pour over vegetable quinoa mix.
- Serve immediately or cooled.
