Ingredients

The following ingredients have 13 Servings
  • 12 oz pasta (bite-sized )
  • 1 1/2 cups bell peppers (chopped,I used 1/2 red & 1/2 green)
  • 1 1/2 cup corn kernels
  • 1 cup black beans (rinsed and drained)
  • 2 cups cherry tomatoes (halved)
  • 1/2 cup red onion (chopped)
  • 1/2 cup cilantro (chopped )
  • chilli lime vinaigrette (recipe below)
  • cotija cheese (optional)
  • 1/4 cup olive oil
  • 1/4 cup lime juice (fresh )
  • 3 tablespoons white wine vinegar
  • 2 teaspoons chilli powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instruction

  • Cook pasta according to package instructions. Drain and cool for 5 minutes.
  • Meanwhile, make the salad dressing by whisking together all the ingredients in a small bowl.
  • Add the cooled, cooked pasta to a very large salad bowl.
  • Add in the peppers, black beans, corn, tomatoes, red onion & cilantro.
  • Toss everything together with the chilli lime vinaigrette.
  • Refrigerate until ready to serve.
