Ingredients
The following ingredients have 13 Servings
- 12 oz pasta (bite-sized )
- 1 1/2 cups bell peppers (chopped,I used 1/2 red & 1/2 green)
- 1 1/2 cup corn kernels
- 1 cup black beans (rinsed and drained)
- 2 cups cherry tomatoes (halved)
- 1/2 cup red onion (chopped)
- 1/2 cup cilantro (chopped )
- chilli lime vinaigrette (recipe below)
- cotija cheese (optional)
- 1/4 cup olive oil
- 1/4 cup lime juice (fresh )
- 3 tablespoons white wine vinegar
- 2 teaspoons chilli powder
- 1 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Instruction
- Cook pasta according to package instructions. Drain and cool for 5 minutes.
- Meanwhile, make the salad dressing by whisking together all the ingredients in a small bowl.
- Add the cooled, cooked pasta to a very large salad bowl.
- Add in the peppers, black beans, corn, tomatoes, red onion & cilantro.
- Toss everything together with the chilli lime vinaigrette.
- Refrigerate until ready to serve.
