Ingredients

The following ingredients have 6 Servings
  • 1/2 cup uncooked brown rice
  • 1-1/2 cups water
  • 1 pkg southwest seasoning
  • 1 can black beans
  • 1 can pinto beans
  • 1 can whole kernel corn
  • 1 jar salsa (small jar)
  • 6 10-inch tortillas
  • 1/2 tsp cumin
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp oregano
  • 1/2 tsp onion powder
  • 1/2 cup cheddar cheese shredded
  • 1/2 cup monterey jack cheese shredded

Instruction

  • Cook rice and southwest seasoning in water. Place beans into a colander, rinse. Transfer to a large bowl. Add corn, onion, spices, and salsa, and toss to mix. Mix in rice and cheese. Divide the mixture evenly among the tortillas and roll up. Serve immediately, or freeze leftover wraps so they don't get soggy.
