Ingredients
The following ingredients have 4 Servings
- 1 pound boneless skinless chicken breasts
- 28 ounces red enchilada sauce
- 2 teaspoons chopped garlic
- 1 teaspoon salt
- ½ teaspoon ground black pepper
- 1 cup sour cream
- 8 large flour tortillas
- 8 ounces shredded cheddar cheese
Instruction
- Pour enchilada sauce into a medium-sized saucepan over medium heat.
- Place the chicken in the saucepan with the sauce.
- Add two cloves of minced garlic to the sauce.
- Cook the chicken for 20 to 30 minutes or until the chicken is fully cooked.
- When chicken is fully cooked remove it from the pan.
- Preheat oven to 350 degrees.
- Shred the chicken and place the shredded chicken in a bowl.
- Season the chicken with salt and pepper.
- Add sour cream to cooked chicken and stir to mix well.
- Add about ¼ cup of chicken mixture to a tortilla.
- Roll up the tortilla and place it in a baking dish.
- Repeat until you fill a 9 x 13-inch baking dish.
- Pour the sauce over the enchiladas.
- Sprinkle cheddar cheese on top.
- Bake at 350 degrees for 10 to 15 minutes or until the cheese has melted.
