Ingredients

The following ingredients have 4 Servings
  • 1 pound boneless skinless chicken breasts
  • 28 ounces red enchilada sauce
  • 2 teaspoons chopped garlic
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • 1 cup sour cream
  • 8 large flour tortillas
  • 8 ounces shredded cheddar cheese

Instruction

  • Pour enchilada sauce into a medium-sized saucepan over medium heat.
  • Place the chicken in the saucepan with the sauce.
  • Add two cloves of minced garlic to the sauce.
  • Cook the chicken for 20 to 30 minutes or until the chicken is fully cooked.
  • When chicken is fully cooked remove it from the pan.
  • Preheat oven to 350 degrees.
  • Shred the chicken and place the shredded chicken in a bowl.
  • Season the chicken with salt and pepper.
  • Add sour cream to cooked chicken and stir to mix well.
  • Add about ¼ cup of chicken mixture to a tortilla.
  • Roll up the tortilla and place it in a baking dish.
  • Repeat until you fill a 9 x 13-inch baking dish.
  • Pour the sauce over the enchiladas.
  • Sprinkle cheddar cheese on top.
  • Bake at 350 degrees for 10 to 15 minutes or until the cheese has melted.
