Ingredients
The following ingredients have 4 Servings
- 8 medium yukon gold potatoes (peeled and cut into 2"-3" pieces)
- 1/4 cup sour cream
- 3 tablespoons butter
- 2 tablespoons chopped chives
- 1/4 teaspoon kosher salt
- 1/8 teaspoon black pepper
Instruction
- Start by peeling and dicing the potatoes into cubes; then add them to a large saucepan.
- Cover the potatoes with cold water, bring to a boil over high heat; then cook until potatoes are tender with a fork, approximately 15 minutes.
- Drain the water and return the potatoes to the pan; then add the sour cream, butter, chives, salt and pepper.
- Mix together with an electric mixer or potato masher until the butter has melted and most of the lumps are gone.
