Ingredients
The following ingredients have 1 Servings
- 1 large onion (sliced)
- 1/4 cup butter
- 5 eggs
- 1 cup milk
- 2 cups yellow corn meal (*)
- 1 teaspoon salt
- 1 teaspoon baking powder
- 1 cup grated cheese (any mild variety)
- 1 cup cottage cheese
- 1 small can corn kernels** (drained; optional)
Instruction
- Preheat the oven to 350°F.
- In a large pan melt the butter on medium heat and soften the sliced onions for 3-5 minutes. Then let cool.
- In a large bowl mix together the eggs and milk. Then whisk in the cornmeal, salt, and baking powder.
- Fold in the grated cheese, cottage cheese, cooled onions, and optional corn kernels.
- Pour the batter into a greased or lined 8-inch square baking dish. Bake for 45-60 minutes until top is golden-brown.
- Let cool then cut into squares.
