Ingredients

The following ingredients have 1 Servings
  • 1 large onion (sliced)
  • 1/4 cup butter
  • 5 eggs
  • 1 cup milk
  • 2 cups yellow corn meal (*)
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 cup grated cheese (any mild variety)
  • 1 cup cottage cheese
  • 1 small can corn kernels** (drained; optional)

Instruction

  • Preheat the oven to 350°F.
  • In a large pan melt the butter on medium heat and soften the sliced onions for 3-5 minutes. Then let cool.
  • In a large bowl mix together the eggs and milk. Then whisk in the cornmeal, salt, and baking powder.
  • Fold in the grated cheese, cottage cheese, cooled onions, and optional corn kernels.
  • Pour the batter into a greased or lined 8-inch square baking dish. Bake for 45-60 minutes until top is golden-brown.
  • Let cool then cut into squares.
