  • 2 piece of bread (toasted (*use gluten free bread for gluten free version))
  • 2 soft boiled eggs (peeled and sliced)
  • 1/2 avocado
  • 1/2 lime
  • 1/2 cup shredded Rotisserie chicken or cold cuts
  • handful pea shoots (or alfalfa sprouts)

Instruction

  • Spread avocado on toast.
  • Top with chicken or cold cuts, eggs, and pea shoots. Sprinkle with fresh lime juice.
  • Serve immediately!
