  • 1/2 cup hot potato cooking water
  • 2 Tablespoon vegetable or canola oil (or other neutral-tasting cooking oil )
  • 1 Tablespoon runny honey (lightly flavoured or *see Note 1 below )
  • 2 1/4 teaspoon instant or dry active yeast
  • 1 teaspoon fine table salt
  • 1 1/2 cups all purpose flour (unbleached recommended, plus more as needed)
  • 1 large egg
  • 1 teaspoon water
