Ingredients

The following ingredients have 4 Servings
  • 10 oz Package of Soba Noodles
  • 1 Lb Asparagus (cleaned and cut into 3)
  • 8 oz Mushrooms (sliced)
  • 2 Cups Edamame (shelled)
  • 2 Carrots (peeled and julienned (or sliced thinly))
  • Salt + Pepper
  • 1 Teaspoon of Oil (any kind)
  • 2 Tablespoons Soy Sauce
  • 2 Teaspoons Sesame Oil
  • 2 Teaspoons Sriracha
  • Juice of 1 Lime
  • 1/2 Teaspoon Ginger (minced)
  • 1/4 Cup Cilantro (chopped)
  • 1 Green Onion (sliced)

Instruction

  • Mix all the sauce ingredients together in a small bowl. Set aside
  • Bring one big pot of water to a boil
  • Season the water with salt, pepper and add a little oil
  • Throw in the soba noodles, edamame, mushrooms and asparagus. Cook for 1 minute
  • Add the carrots and cook for 2 more minutes. Stir
  • Drain the whole mixture in a colander
  • Pour the pasta and veggies back in the pot
  • Add the sauce on top and stir well with a wooden spoon
  • Serve and enjoy!
