Ingredients
The following ingredients have 4 Servings
- 10 oz Package of Soba Noodles
- 1 Lb Asparagus (cleaned and cut into 3)
- 8 oz Mushrooms (sliced)
- 2 Cups Edamame (shelled)
- 2 Carrots (peeled and julienned (or sliced thinly))
- Salt + Pepper
- 1 Teaspoon of Oil (any kind)
- 2 Tablespoons Soy Sauce
- 2 Teaspoons Sesame Oil
- 2 Teaspoons Sriracha
- Juice of 1 Lime
- 1/2 Teaspoon Ginger (minced)
- 1/4 Cup Cilantro (chopped)
- 1 Green Onion (sliced)
Instruction
- Mix all the sauce ingredients together in a small bowl. Set aside
- Bring one big pot of water to a boil
- Season the water with salt, pepper and add a little oil
- Throw in the soba noodles, edamame, mushrooms and asparagus. Cook for 1 minute
- Add the carrots and cook for 2 more minutes. Stir
- Drain the whole mixture in a colander
- Pour the pasta and veggies back in the pot
- Add the sauce on top and stir well with a wooden spoon
- Serve and enjoy!
