Ingredients
The following ingredients have 4 Servings
- 1/2 cup confectioners sugar
- 1 cup (2 sticks) unsalted butter, softened
- 1 teaspoon vanilla
- 1/4 teaspoon salt
- 2 cups all-purpose flour
- 1 cup finely chopped pecans
- 1 1/2 cups confectioners sugar to roll cookies in
Instruction
- Heat oven to 325 degrees. Line a baking sheet with parchment paper and set aside.
- Using a hand mixer, beat the softened butter and powdered sugar until fluffy. Add vanilla and mix. Add the flour, and salt and mix until incorporated.
- Gently fold in pecans. Using a #40 (about 1 1/2 tablespoon) scoop, measure out dough and roll into a ball. Place on the prepared baking sheet. Bake in the oven for approximately 18-20 minutes until golden brown.
- Remove from oven and let cool for 5-8 minutes. While cookies are warm roll in powdered sugar. Let cookies cool completely then roll in sugar a second time.
- Serve immediately.
