Ingredients

The following ingredients have 4 Servings
  • 1/2  cup confectioners sugar
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 teaspoon vanilla
  • 1/4 teaspoon salt
  • 2 cups all-purpose flour
  • 1 cup finely chopped pecans
  • 1 1/2 cups confectioners sugar to roll cookies in

Instruction

  • Heat oven to 325 degrees. Line a baking sheet with parchment paper and set aside.
  • Using a hand mixer, beat the softened butter and powdered sugar until fluffy. Add vanilla and mix. Add the flour, and salt and mix until incorporated.
  • Gently fold in pecans. Using a #40 (about 1 1/2 tablespoon) scoop, measure out dough and roll into a ball. Place on the prepared baking sheet. Bake in the oven for approximately 18-20 minutes until golden brown.
  • Remove from oven and let cool for 5-8 minutes. While cookies are warm roll in powdered sugar. Let cookies cool completely then roll in sugar a second time.
  • Serve immediately.
