Ingredients

The following ingredients have 6 Servings
  • 6 bone-in chicken thighs (, about 3 lbs., skin removed)
  • 1 tsp. dried Italian seasoning (, divided)
  • 1 tsp. kosher salt (, divided)
  • 1/2 tsp. garlic powder
  • 3 plum tomatoes (, chopped, 1 1/2 cups)
  • 1 cup panko breadcrumbs
  • 1/2 cup shredded Parmesan cheese
  • 4 Tbs. olive oil (, divided)

Instruction

  • Preheat oven to 425F.
  • Arrange chicken thighs in roasting pan or baking dish. Sprinkle with 1/2 tsp. Italian seasoning, 1/2 tsp. kosher salt and garlic powder.
  • Combine tomatoes, panko, Parmesan, 3 Tbs. olive oil and remaining 1/2 tsp. Italian seasoning and remaining 1/2 tsp. kosher salt. Spoon tomato mixture over chicken. Drizzle with remaining 1 Tbs. olive oil.
  • Bake 45 minutes or until topping is golden and chicken is cooked through and meat thermometer registers 165F.
