- 1 1/2 teaspoon grated fresh ginger
- 1 garlic clove, (minced)
- 1 (14 ounce) package extra firm tofu, (drained and pressed at least 30 minutes)
- 1 cup raw cashews, (soaked in water 4-8 hours)
- 2 tablespoons lemon juice
- 1-2 tablespoon wasabi powder, (to taste)
- 1 teaspoon salt
- 2-4 tablespoons unflavored soy or almond milk ((as needed))
- 8 slices sandwich bread, (toasted)
- 1/2 cucumber, (sliced thin)
- 2 cups baby spinach
- 2 scallions, (chopped)
- 1-2 tablespoons rice vinegar
- Salt and pepper to taste
