  • 1 1/2 teaspoon grated fresh ginger
  • 1 garlic clove, (minced)
  • 1 (14 ounce) package extra firm tofu, (drained and pressed at least 30 minutes)
  • 1 cup raw cashews, (soaked in water 4-8 hours)
  • 2 tablespoons lemon juice
  • 1-2 tablespoon wasabi powder, (to taste)
  • 1 teaspoon salt
  • 2-4 tablespoons unflavored soy or almond milk ((as needed))
  • 8 slices sandwich bread, (toasted)
  • 1/2 cucumber, (sliced thin)
  • 2 cups baby spinach
  • 2 scallions, (chopped)
  • 1-2 tablespoons rice vinegar
  • Salt and pepper to taste
