Ingredients
The following ingredients have 4 Servings
- 1 pound kielbasa sausage
- 6 small red potatoes
- 2 ears yellow corn (shucked)
- 2 tablespoons unsalted butter
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 cup colby-jack cheese (shredded)
- Heavy-duty aluminum foil
Instruction
- Preheat grill to medium-high heat.
- Cut two square pieces of heavy-duty aluminum foil. (Regular foil will rip, buy the good stuff.)
- Cut the sausage and potatoes into 1-inch pieces. Divide evenly between foil, placing ingredients in the center on the foil. Cut each ear of corn into 3 pieces, and 1 ear to each foil square.
- Top the sausage and veggies with 1 tablespoon butter, and a sprinkle of salt and pepper.
- Close the foil by folding one side over the ingredients and then the opposite side back over the top. You should have a rectangle with open ends. Fold the end up twice to close the packet. Repeat with other foil square. (see pics in post)
- Place packets seam side up on the grill. Cook for 10 to 12 minutes. Flip packets and cook for another 10-12 minutes. Remove from grill to serving plates.
- Cut a capital I shape into the foil. Carefully pull back the foil on each side, watch for the hot steam! Top with cheese and let it melt. Serve warm.
