Ingredients

The following ingredients have 4 Servings
  • 1 pound kielbasa sausage
  • 6 small red potatoes
  • 2 ears yellow corn (shucked)
  • 2 tablespoons unsalted butter
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup colby-jack cheese (shredded)
  • Heavy-duty aluminum foil

Instruction

  • Preheat grill to medium-high heat. 
  • Cut two square pieces of heavy-duty aluminum foil. (Regular foil will rip, buy the good stuff.) 
  • Cut the sausage and potatoes into 1-inch pieces. Divide evenly between foil, placing ingredients in the center on the foil. Cut each ear of corn into 3 pieces, and 1 ear to each foil square. 
  • Top the sausage and veggies with 1 tablespoon butter, and a sprinkle of salt and pepper.
  • Close the foil by folding one side over the ingredients and then the opposite side back over the top. You should have a rectangle with open ends. Fold the end up twice to close the packet. Repeat with other foil square. (see pics in post)
  • Place packets seam side up on the grill. Cook for 10 to 12 minutes. Flip packets and cook for another 10-12 minutes. Remove from grill to serving plates.
  • Cut a capital I shape into the foil. Carefully pull back the foil on each side, watch for the hot steam! Top with cheese and let it melt. Serve warm.
