Ingredients
The following ingredients have 4 Servings
- 1.333 cups flour
- 0.333 cup Buckwheat flour
- 1 tsp Dried yeast
- 0.5 cup milk
- 1 egg
- clarified butter
- 0.5 cup Crème fraiche
- 0.25 cup cream cheese
- 1 Tbsp lemon juice
- 1 cup smoked Salmon (thinly sliced)
- 1 Tbsp Chives
Instruction
- To make the dough, mix the flours and yeast together in a bowl. Add the milk, egg and some salt and knead quickly together. Cover and leave to rise in a warm place for around 1 hour.
- Heat some clarified butter in a pan and fry spoonfuls of the dough on each side until golden brown. Keep the finished pancakes warm in the oven (around 100°C) until they are all finished.
- To make the topping, mix together the creme fraiche and the cream cheese and season with lemon juice, salt and ground black pepper and a pinch of sugar.
- Spread the mixture on the blinis and place slices of salmon on top. Garnish with the chives and serve immediately.
