Ingredients

The following ingredients have 4 Servings
  • 1/4 cup finely minced garlic
  • 3 tablespoons soy sauce
  • 1 tablespoon sriracha
  • 1 tablespoon lime juice
  • 1 teaspoon pasilla chili powder
  • 1 teaspoon Dijion mustard
  • 1 teaspoon ground cumin
  • 1 teaspoon freshly ground black pepper
  • 3 pounds chicken thighs
  • vegetable oil (as needed)
  • 1 cup cilantro leaves and tender stems
  • 1/3 cup jalpenos seeded and diced
  • 1/3 cup crumbled feta cheese
  • 2 teaspoons chopped garlic
  • 1 1/2 tablespoons lime juice
  • 3/4 teaspoon sea salt
  • 1/2 teaspoon Dijion mustard
  • 1/2 tablespoon Sriracha
  • 1/2 teaspoon honey
  • 1/2 teaspoon cumin
  • 1/2 cup extra virgin olive oil

Instruction

  • Marinade Preparation
  • In a large bowl, whisk together garlic, soy sauce, sriracha, lime juice, pasilla chili powder, mustard, cumin, pepper and salt.
  • Add chicken thighs, turning to coat them all over with marinade. Cover and refrigerate at least 2 hours, these are best made the night before, and allowed to marinade all night
