  • 1 tbsp (15 ml) water
  • 2 onions, thinly sliced
  • 2 tbsp butter
  • 2 garlic cloves, chopped
  • 2 tbsp unbleached all-purpose flour
  • 1 can (10 oz/284 ml) concentrated chicken broth
  • 1 can (10 oz/284 ml) concentrated beef broth
  • 1 tbsp (15 ml) tomato paste
  • 1 tbsp (15 ml) Worcestershire sauce
  • 1 tsp sweet paprika
  • ¾ lb (340 g) cheese curds
  • 5 oz (140 g) smoked meat, warmed and torn into pieces
  • 1 cup (150 g) frozen green peas, blanched
