  • butcher's twine
  • water smoker or charcoal grill
  • wood chips (for ours we used a mixture of pecan, apple & oak)
  • water
  • probe thermometer and/or instant-read thermometer*
  • tongs
  • heavy-duty aluminum foil
  • 1 tablespoon salt
  • 2 teaspoons black pepper
  • 1 teaspoon cayenne pepper
  • 1 teaspoon oregano
  • ½ teaspoon chili powder
  • 2 teaspoons garlic powder
