- butcher's twine
- water smoker or charcoal grill
- wood chips (for ours we used a mixture of pecan, apple & oak)
- water
- probe thermometer and/or instant-read thermometer*
- tongs
- heavy-duty aluminum foil
- 1 tablespoon salt
- 2 teaspoons black pepper
- 1 teaspoon cayenne pepper
- 1 teaspoon oregano
- ½ teaspoon chili powder
- 2 teaspoons garlic powder
