- 3 pounds Russet potatoes
- 1/2 cup Chicken broth
- 10 cloves Garlic
- 1 tablespoon Extra virgin olive oil
- 1 cup yogurt
- 1/2 cup milk
- Salt and pepper to taste
Instruction
- Wash and cut out any bad spots on potatoes Puncture holes in the potatoes with a fork Place all the potatoes in the microwave for 15 minutes on high, then cool potatoes Saute the garlic in olive oil for 2-3 minutes Cut cooled potatoes into sliced and place in crock pot with broth Pour garlic on top and mix to distribute Cook on low for 1-1 1/2 hours until potatoes are cooked and soft. using a hand blender, mash potatoes with milk and yogurt. add salt to taste.
