Ingredients

The following ingredients have 2 Servings
  • 2 cups pumpkin seeds (fresh from 1 pumpkin)
  • 1/4 teaspoon Himayalan pink salt (or kosher)
  • 1 tablespoon extra virgin olive oil

Instruction

  • Preheat oven to 300°F.
  • Coat baking pan with non-stick cooking spray.
  • In a medium bowl, toss the seeds, salt and olive oil together.
  • Spread seeds evenly on baking sheet.
  • Place in oven and roast for about 45 minutes. Stir the seeds every 10 minutes or so.
  • Cool and serve.
