The following ingredients have 8 Servings
- 1 Tbsp olive oil
- 2 pounds boneless (skinless chicken breasts, cut into 1” cubes)
- 2 tsp dried oregano
- ½ tsp salt
- ½ tsp black pepper
- 1 medium white onion (diced)
- 1 green bell pepper (diced)
- 2 tsp garlic (minced)
- 2 15-oz. cans great northern beans, drained and rinsed
- 3 cups low-sodium chicken broth
- 1 15.25-oz can of corn, drained (or 2 cups frozen corn)
- 1 4½-oz. can green chilies
- 2 tsp cumin
- 1½ tsp kosher salt
- 1 tsp chili powder
- ½ tsp black pepper
- ¼ cup fresh cilantro (chopped)
- 2 Tbsp lime juice
- 4 oz. cream cheese (softened)
- {for topping} additional cilantro (sour cream, diced tomatoes, shredded pepper jack cheese, lime wedges, tortilla strips)
