Ingredients

The following ingredients have 8 Servings
  • 1 Tbsp olive oil
  • 2 pounds boneless (skinless chicken breasts, cut into 1” cubes)
  • 2 tsp dried oregano
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 medium white onion (diced)
  • 1 green bell pepper (diced)
  • 2 tsp garlic (minced)
  • 2 15-oz. cans great northern beans, drained and rinsed
  • 3 cups low-sodium chicken broth
  • 1 15.25-oz can of corn, drained (or 2 cups frozen corn)
  • 1 4½-oz. can green chilies
  • 2 tsp cumin
  • 1½ tsp kosher salt
  • 1 tsp chili powder
  • ½ tsp black pepper
  • ¼ cup fresh cilantro (chopped)
  • 2 Tbsp lime juice
  • 4 oz. cream cheese (softened)
  • {for topping} additional cilantro (sour cream, diced tomatoes, shredded pepper jack cheese, lime wedges, tortilla strips)
