Ingredients

The following ingredients have 6 Servings
  • 1- (15-ounce) can cannellini beans (drained and rinsed)
  • 1- (15-ounce) can kidney beans (drained and rinsed)
  • 1- (15-ounce) can black beans (drained and rinsed)
  • 1 tablespoon extra virgin olive oil
  • 1 cup diced red onion
  • 1 green pepper (seeded and diced)
  • 1 tablespoon minced garlic
  • 2 cups diced plum tomatoes
  • 2 teaspoons chili powder
  • 1/2 tablespoon ground cumin
  • 1/4 cup tomato paste
  • 1 cup water
  • 1/2 teaspoon kosher salt
  • 1/8 teaspoon black pepper

Instruction

  • Add the beans to your slow cooker.
  • Heat the oil in a medium saucepan over medium heat, and add the onions and peppers. Saute for about 3-5 minutes; then add the garlic, tomatoes, chili powder and cumin and saute for another 1-2 minutes.
  • Add the mixture to the beans and mix well.
  • Cook on LOW for 4-6 hours or HIGH for 2-4 hours. Serve alone or over rice or pasta.
