Ingredients
The following ingredients have 6 Servings
- 1- (15-ounce) can cannellini beans (drained and rinsed)
- 1- (15-ounce) can kidney beans (drained and rinsed)
- 1- (15-ounce) can black beans (drained and rinsed)
- 1 tablespoon extra virgin olive oil
- 1 cup diced red onion
- 1 green pepper (seeded and diced)
- 1 tablespoon minced garlic
- 2 cups diced plum tomatoes
- 2 teaspoons chili powder
- 1/2 tablespoon ground cumin
- 1/4 cup tomato paste
- 1 cup water
- 1/2 teaspoon kosher salt
- 1/8 teaspoon black pepper
Instruction
- Add the beans to your slow cooker.
- Heat the oil in a medium saucepan over medium heat, and add the onions and peppers. Saute for about 3-5 minutes; then add the garlic, tomatoes, chili powder and cumin and saute for another 1-2 minutes.
- Add the mixture to the beans and mix well.
- Cook on LOW for 4-6 hours or HIGH for 2-4 hours. Serve alone or over rice or pasta.
