Ingredients

The following ingredients have 4 Servings
  • 1 1/4 lb. ground turkey
  • 1 sweet bell pepper, chopped
  • 1 sweet onion, chopped
  • 2 cloves garlic, minced
  • 1-2 tablespoons chili powder
  • 2 teaspoons cumin
  • 1 teaspoon sugar
  • 1 teaspoon oregano
  • 1/2 teaspoon red pepper flakes
  • 1 (15-oz.) can red kidney beans, rinsed and drained
  • 1 (15-oz.) can black beans, rinsed and drained
  • 1 (15-oz.) can diced tomatoes, undrained
  • 1 (15-oz.) can tomato sauce
  • 6 tablespoons. shredded Cheddar cheese
  • salt and pepper to taste

Instruction

  • Cook the ground turkey, onions, and garlic in a large skillet over medium heat until the onions are soft and the turkey is cooked through. Season with 1 teaspoon salt and pepper and stir in chili powder, sugar, oregano, cumin, and red pepper flakes. Cook for another 30 seconds, or until fragrant.
  • Coat the slow cooker insert with cooking spray and transfer the turkey mixture into the slow cooker.
  • Add peppers, kidney beans, black beans, tomatoes, tomato sauce, and 1 1/2 cups water. Stir and cover the slow cooker.
  • Cook on LOW heat for 4 to 6 hours.
