Ingredients
The following ingredients have 4 Servings
- 1 1/4 lb. ground turkey
- 1 sweet bell pepper, chopped
- 1 sweet onion, chopped
- 2 cloves garlic, minced
- 1-2 tablespoons chili powder
- 2 teaspoons cumin
- 1 teaspoon sugar
- 1 teaspoon oregano
- 1/2 teaspoon red pepper flakes
- 1 (15-oz.) can red kidney beans, rinsed and drained
- 1 (15-oz.) can black beans, rinsed and drained
- 1 (15-oz.) can diced tomatoes, undrained
- 1 (15-oz.) can tomato sauce
- 6 tablespoons. shredded Cheddar cheese
- salt and pepper to taste
Instruction
- Cook the ground turkey, onions, and garlic in a large skillet over medium heat until the onions are soft and the turkey is cooked through. Season with 1 teaspoon salt and pepper and stir in chili powder, sugar, oregano, cumin, and red pepper flakes. Cook for another 30 seconds, or until fragrant.
- Coat the slow cooker insert with cooking spray and transfer the turkey mixture into the slow cooker.
- Add peppers, kidney beans, black beans, tomatoes, tomato sauce, and 1 1/2 cups water. Stir and cover the slow cooker.
- Cook on LOW heat for 4 to 6 hours.
