Ingredients
The following ingredients have 4 Servings
- 2 tablespoons extra-virgin olive oil
- 6 (6-ounce) boneless, skinless chicken breasts
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1 medium sweet onion (, sliced)
- 3 cloves garlic (, minced)
- 1 tablespoon dried Italian herbs blend
- 15 ounce can black beans (, rinsed and drained)
- 28 ounce can crushed tomatoes
- 1/3 cup balsamic vinegar
- grated fresh Parmesan cheese (, optional)
- fresh chopped parsley (, optional)
Instruction
- Drizzle the oil into a 6-quart slow cooker. Sprinkle both sides of the chicken with the salt and pepper and place in the slow cooker.
- Top chicken with the onion, garlic, dried herbs, black beans, crushed tomatoes, and balsamic vinegar.
- Cook on low for 3 hours (or until a thermometer reads 165 degrees F when inserted into the thickest part of the breast.)
- Serve over pasta or mashed potatoes with a little sprinkling of Parmesan and chopped parsley, if desired!
