Ingredients

The following ingredients have 4 Servings
  • 2 tablespoons extra-virgin olive oil
  • 6 (6-ounce) boneless, skinless chicken breasts
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 medium sweet onion (, sliced)
  • 3 cloves garlic (, minced)
  • 1 tablespoon dried Italian herbs blend
  • 15 ounce can black beans (, rinsed and drained)
  • 28 ounce can crushed tomatoes
  • 1/3 cup balsamic vinegar
  • grated fresh Parmesan cheese (, optional)
  • fresh chopped parsley (, optional)

Instruction

  • Drizzle the oil into a 6-quart slow cooker. Sprinkle both sides of the chicken with the salt and pepper and place in the slow cooker.
  • Top chicken with the onion, garlic, dried herbs, black beans, crushed tomatoes, and balsamic vinegar.
  • Cook on low for 3 hours (or until a thermometer reads 165 degrees F when inserted into the thickest part of the breast.)
  • Serve over pasta or mashed potatoes with a little sprinkling of Parmesan and chopped parsley, if desired!
