The following ingredients have 4 Servings
  • 10 chicken thighs (skin removed)
  • 1 large onion (chopped)
  • 1 tbsp garlic (minced)
  • 1 tsp chilli (optional - we like it in ours )
  • 1 tbsp ginger (chopped finely)
  • 5 mushrooms (quartered)
  • 1 large celery stick (chopped)
  • 1 large carrot (chopped)
  • 125 ml water
  • 2 chicken stock cubes
  • 1 large yellow pepper (sliced)
  • 1 large red pepper (sliced)
  • 1 large green pepper (sliced)
  • 1 bunch spring onions (chopped)
  • 4 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 2 tbsp fish sauce
  • 2 tbsp lemon juice
  • 2 tbsp granulated sweetener
  • 4 tbsp tomato puree
  • ½ tsp xanthan gum
  • ½ whole fresh pineapple (cut into chunks)
  • low calorie cooking spray
