Ingredients

The following ingredients have 4 Servings
  • 4 boneless skinless chicken breasts
  • salt and pepper
  • 1 1/2 cups salsa
  • 1 cup black beans, drained and washed
  • 1 cup white or brown rice
  • 1 cup grated cheddar cheese

Instruction

  • Season the chicken with salt and pepper and place at the bottom of your slow cooker. Pour the salsa and black beans over the top, then cook on low for 6 to 8 hours or on high for 3 to 4 hours. Just before serving prepare the rice according to the package instructions, and use two forks to pull apart and shred the chicken.  It should fall apart pretty easily. Serve on top of the white or brown rice with a sprinkle of cheddar cheese on top.
