Ingredients

The following ingredients have 8 Servings
  • 4 lbs chuck roast (or rump roast)
  • 1 teaspoon Italian seasoning
  • 1 Tablespoon olive oil
  • 1 lb baby potatoes (halved)
  • 2 cup carrots (cut into 1" pieces)
  • 2 stalks celery (cut into 1" pieces)
  • 1 onion chopped
  • 1 cup mushrooms (halved if large)
  • 3 cloves garlic (sliced)
  • 4 cups beef broth
  • 2 Tablespoons tomato paste
  • 2 Tablespoons corn starch

Instruction

  • Season roast with Italian seasoning, salt & pepper to taste.
  • Preheat oil in a large pan and brown roast on all sides.
  • Place vegetables in the bottom of a 6qt slow cooker. Place roast on top. Combine beef broth and tomato paste and pour overtop.
  • Cook on high 5-6 hours or on low 8-10 hours or until fork tender.
  • Remove beef and vegetables cover with foil. Combine 2 tablespoons cornstarch with 2 tablespoons water. Whisk into broth and cover. Let cook 10 minutes or until thickened. Serve gravy over roast and vegetables.
