Ingredients
The following ingredients have 8 Servings
- 4 lbs chuck roast (or rump roast)
- 1 teaspoon Italian seasoning
- 1 Tablespoon olive oil
- 1 lb baby potatoes (halved)
- 2 cup carrots (cut into 1" pieces)
- 2 stalks celery (cut into 1" pieces)
- 1 onion chopped
- 1 cup mushrooms (halved if large)
- 3 cloves garlic (sliced)
- 4 cups beef broth
- 2 Tablespoons tomato paste
- 2 Tablespoons corn starch
Instruction
- Season roast with Italian seasoning, salt & pepper to taste.
- Preheat oil in a large pan and brown roast on all sides.
- Place vegetables in the bottom of a 6qt slow cooker. Place roast on top. Combine beef broth and tomato paste and pour overtop.
- Cook on high 5-6 hours or on low 8-10 hours or until fork tender.
- Remove beef and vegetables cover with foil. Combine 2 tablespoons cornstarch with 2 tablespoons water. Whisk into broth and cover. Let cook 10 minutes or until thickened. Serve gravy over roast and vegetables.
