Ingredients

The following ingredients have 6 Servings
  • 1 lb. pork loin
  • 1 recipe for green goddess dressing (see below)
  • 1 Serrano chile (cored and sliced)
  • 8 corn tortillas
  • Watermelon radish (cut into slices)
  • Cilantro (fresh and diced)
  • Extra Green Goddess Dressing
  • 1 Avocado
  • 1 large handful of fresh parsley
  • 1 large handful of fresh basil
  • 1 Tablespoon fresh chives
  • ¼ cup sweet yellow or white onion
  • 2 stalks green onion (ends removed)
  • 1 clove garlic (minced)
  • 1 teaspoon apple cider vinegar
  • 2 Tablespoons olive oil
  • ¾ cup water
  • 1 lemon (about ¼ cup of fresh lemon juice)
  • ¼ teaspoon lemon zest
  • ⅛ teaspoon black pepper
  • 1 teaspoon Himalayan salt

Instruction

  • Blend all the Green Goddess Dressing Ingredients in the blender and blend for 30-45 seconds.
  • In the slow cooker add the pork loin and cored and sliced Serrano chili. Pour about 1/2 the Green Goddess Dressing on top.
  • Cover and slow cook the pork for 4-6 hours on low. If you do a large piece you can cook it on high.
  • When the pork loin is done cooking slice or dice it. Heat the corn tortillas at 200 Degrees F for about 5-10 minutes. Add the chopped pork to the heated tortillas, Serrano chili's, watermelon radishes, chopped cilantro and extra Green Goddess Dressing for garnish.
  • Serve any leftover pork for more tacos another night!
