Ingredients
The following ingredients have 6 Servings
- 1 lb. pork loin
- 1 recipe for green goddess dressing (see below)
- 1 Serrano chile (cored and sliced)
- 8 corn tortillas
- Watermelon radish (cut into slices)
- Cilantro (fresh and diced)
- Extra Green Goddess Dressing
- 1 Avocado
- 1 large handful of fresh parsley
- 1 large handful of fresh basil
- 1 Tablespoon fresh chives
- ¼ cup sweet yellow or white onion
- 2 stalks green onion (ends removed)
- 1 clove garlic (minced)
- 1 teaspoon apple cider vinegar
- 2 Tablespoons olive oil
- ¾ cup water
- 1 lemon (about ¼ cup of fresh lemon juice)
- ¼ teaspoon lemon zest
- ⅛ teaspoon black pepper
- 1 teaspoon Himalayan salt
Instruction
- Blend all the Green Goddess Dressing Ingredients in the blender and blend for 30-45 seconds.
- In the slow cooker add the pork loin and cored and sliced Serrano chili. Pour about 1/2 the Green Goddess Dressing on top.
- Cover and slow cook the pork for 4-6 hours on low. If you do a large piece you can cook it on high.
- When the pork loin is done cooking slice or dice it. Heat the corn tortillas at 200 Degrees F for about 5-10 minutes. Add the chopped pork to the heated tortillas, Serrano chili's, watermelon radishes, chopped cilantro and extra Green Goddess Dressing for garnish.
- Serve any leftover pork for more tacos another night!
