Ingredients

The following ingredients have 8 Servings
  • 4 carrots, (peeled, sliced 1-inch thick, 2 cups)
  • 1 onion, (chopped, 1 cup)
  • 1 cup golden raisins
  • 1/2 cup pimento stuffed green olives
  • 1 1/2 lbs. boneless skinless chicken thighs, (cut in 2-inch pieces)
  • 1 (14.5 oz.) can diced tomatoes
  • 2 Tbs. flour
  • 1 clove garlic, (minced)
  • 1 tsp. ground cinnamon
  • 1/2 tsp. ground cumin
  • 1/2 tsp. kosher salt
  • 1/3 cup toasted sliced almonds
  • 2 Tbs. chopped parsley
  • hot cooked couscous, (serving suggestion)

Instruction

  • Arrange carrots, onion, raisins and olives on bottom of slow cooker. Top with chicken.
  • Combine diced tomatoes with their juices, flour, garlic, cinnamon, cumin and kosher salt until blended. Pour over chicken and vegetables.
  • Cook 7-8 hours on low or 3-4 hours on high, until chicken is thoroughly cooked and vegetables are tender.
  • Stir until blended. Top with almonds and parsley. Serve with hot cooked couscous, if desired.
