Ingredients

The following ingredients have 12 Servings
  • 1 pound beans (dry, soaked overnight, any variety)
  • 1 pound boneless skinless chicken breasts
  • 1 1/2 cups yellow onion (chopped)
  • 1 1/2 cups green bell pepper (chopped)
  • 3 garlic cloves (minced)
  • 2 teaspoons cayenne pepper
  • 1/2 teaspoon sea salt
  • 3 cups chicken broth (low-sodium )
  • 1/2 teaspoon black pepper
  • 2 tablespoons parsley flakes
  • 2 bay leaves

Instruction

  • Combine all ingredients in the slow cooker. Cook on low 7 hours. If thicker broth is desired, use a spoon to mash up some beans against the side of the pot before serving.
  • Serve over brown rice or as a soup.
