Ingredients
The following ingredients have 12 Servings
- 1 pound beans (dry, soaked overnight, any variety)
- 1 pound boneless skinless chicken breasts
- 1 1/2 cups yellow onion (chopped)
- 1 1/2 cups green bell pepper (chopped)
- 3 garlic cloves (minced)
- 2 teaspoons cayenne pepper
- 1/2 teaspoon sea salt
- 3 cups chicken broth (low-sodium )
- 1/2 teaspoon black pepper
- 2 tablespoons parsley flakes
- 2 bay leaves
Instruction
- Combine all ingredients in the slow cooker. Cook on low 7 hours. If thicker broth is desired, use a spoon to mash up some beans against the side of the pot before serving.
- Serve over brown rice or as a soup.
