Ingredients
The following ingredients have 6 Servings
- 2 tablespoons olive oil
- 1 onion (chopped)
- 1 jalapeño (minced)
- 1 garlic clove (minced)
- 1 pound ground beef
- 1 teaspoon ground cumin
- 1/4 teaspoon cayenne pepper
- 1/2 teaspoon sea salt
- 1/4 teaspoon black pepper
- 1/2 cup rolled oats (coarsely ground in a food processor)
- 1 egg
- 1 cup diced tomatoes (in juice)
- 1 garlic clove (minced)
- 1 tablespoon honey
- 1 tablespoon lime (juice)
- 1 chipotle chili in adobo sauce (canned)
- 1/4 teaspoon sea salt
Instruction
- Heat a skillet over medium heat. Add the olive oil, onions, and jalapeño. Cook until soft and add the garlic. Cook for 1 minute and add to a large bowl. Stir in the beef and seasonings and mix well. When mixture is slightly cool, add the oats and egg. Mix well.
- Shape the mixture into a round loaf and transfer to a slow cooker pot. Cover and cook on low, for 6 hours.
- Before serving, make the glaze by combining all of the ingredients in a small saucepan. Bring to a boil, cook for 5 minutes and transfer to a blender. Blend until smooth. Spoon over the meatloaf before serving.
