Ingredients
The following ingredients have 4 Servings
- 2-3 pounds Smithfield Boneless Fresh Pork Sirloin Roast
- 1 cup water
- 1 tablespoon olive oil
- 1 1/2 teaspoons coriander
- 1 teaspoon cumin
- 1 teaspoon paprika
- 2 teaspoons minced garlic
- black pepper and salt to taste
- 1 medium red onion (chopped)
- 1 cup sliced cherry tomatoes
- 1/4 cup roasted red peppers
- 1/2 cup black olives
- 1/2 cup kalamata olives
- 1/4 cup feta cheese (crumbled)
- 1/4 cup fresh parsley (chopped)
Instruction
- Add red onions, pork roast and water to slow cooker.
- Rub olive oil and all seasonings on top of roast.
- Cook on low for 8-10 hours or high for 4-6 hours.
- Remove pork roast and slice or shred with two forks. Return pork to slow cooker for about 30 additional minutes.
- Remove pork from slow cooker, draining most of liquid, then combine pork, the remaining vegetables and quinoa together and serve in a bowl.
