Ingredients

The following ingredients have 4 Servings
  • 2 lb pork roast (pork loin or tenderloin is best)
  • 16 ounce bag of frozen mango chunks
  • 1/2 cup apple juice
  • 1/4 cup soy sauce
  • 2 1/2 Tbs brown sugar (can substitute honey or agave)
  • 1/2 tsp garlic powder
  • 1 tsp Italian seasoning blend
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 3 Tbs corn starch
  • 12 corn tortillas
  • 1 cup Mexican Cheese Blend (or shredded cheese of choice)
  • 1/2 white or yellow onion (chopped)
  • 1/2 bunch cilantro (chopped)
  • 2 Tbs lime juice (fresh is best)
  • a pinch of salt

Instruction

  • In a small bowl mix together Marinade ingredients.
  • Add pork roast to slow cooker, and dump marinade sauce over top
  • Add frozen mango to slow cooker
  • and Cook on high 4-6 hours or low for 7-8 hours
  • When finished cooking, shred pork and set aside
  • Chop onions and cilantro, and combine in medium sized bowl, stir in lime juice and a pinch of salt, set aside
  • Spray a griddle with cooking spray and heat 300 degrees,
  • Once hot, place corn tortillas on the griddle and sprinkle with cheese and a couple TBS of the shredded mango pork
  • When tortilla starts to get crispy, remove from griddle, top with onion and cilantro salsa, and serve!
