Ingredients
The following ingredients have 4 Servings
- 2 lb pork roast (pork loin or tenderloin is best)
- 16 ounce bag of frozen mango chunks
- 1/2 cup apple juice
- 1/4 cup soy sauce
- 2 1/2 Tbs brown sugar (can substitute honey or agave)
- 1/2 tsp garlic powder
- 1 tsp Italian seasoning blend
- 1/2 tsp salt
- 1/2 tsp black pepper
- 3 Tbs corn starch
- 12 corn tortillas
- 1 cup Mexican Cheese Blend (or shredded cheese of choice)
- 1/2 white or yellow onion (chopped)
- 1/2 bunch cilantro (chopped)
- 2 Tbs lime juice (fresh is best)
- a pinch of salt
Instruction
- In a small bowl mix together Marinade ingredients.
- Add pork roast to slow cooker, and dump marinade sauce over top
- Add frozen mango to slow cooker
- and Cook on high 4-6 hours or low for 7-8 hours
- When finished cooking, shred pork and set aside
- Chop onions and cilantro, and combine in medium sized bowl, stir in lime juice and a pinch of salt, set aside
- Spray a griddle with cooking spray and heat 300 degrees,
- Once hot, place corn tortillas on the griddle and sprinkle with cheese and a couple TBS of the shredded mango pork
- When tortilla starts to get crispy, remove from griddle, top with onion and cilantro salsa, and serve!
