Ingredients

The following ingredients have 4 Servings
  • 1 15 oz bottle Hoisin sauce
  • 1/2 cup peanut butter
  • 1/2 cup soy sauce
  • 1 Tbsp lime juice
  • 1 Tbsp garlic paste or minced garlic
  • 1 Tbsp ginger paste or minced ginger
  • 1 to 2 Tbsps Sriracha (optional for spice)
  • 2 pounds boneless chicken breasts or pork chops
  • 1 onion (diced)
  • 1 cup shredded carrots
  • 1 8 oz package rice noodles
  • chopped peanuts and cilantro for garnish

Instruction

  • In a bowl whisk together the Hoisin sauce, peanut butter, soy sauce, lime juice, garlic, ginger, and Sriracha.
  • Put the chicken or pork, diced onion, and shredded carrots in the slow cooker and pour the sauce over top, give it a stir until evenly mixed. Turn on low for 6 to 8 hours.
  • Shred the chicken or pork in the slow cooker with two forks. Prepare the rice noodles according to package directions (I soaked mine in hot water for 10 minutes and drained the water).
  • Add the cooked rice noodles to the slow cooker and stir until evenly mixed and cook 10 more minutes on low in the slow cooker. Top with cilantro and peanuts if desired.
