Ingredients
The following ingredients have 4 Servings
- 1-2 tablespoons olive oil
- 1 medium onion (cut into slivers)
- 4 garlic cloves (sliced)
- 4 carrot (chopped)
- 1-2 bay leaves
- 1/2 teaspoon dried thyme
- 1/2 teaspoon black pepper
- 1-1/2 pounds fingerling potatoes
- 2 pounds cabbage
- 8 ounces fresh green beans
- 1-1/2 to 2 pounds cottage ham (smoked butt or pork shoulder roll)
- 1 cup chicken or vegetable broth
- 1 tablespoon grainy mustard
Instruction
- Saute the onion, garlic, and carrot in olive oil with the bay leaves 5-10 minutes (I use the saute setting on the Instant Pot or you can do this part on the stove ).
- Add remaining ingredients to the pot finishing with cabbage on top.
- Mix mustard with the broth and pour over.
- Cover and cook on slow cooker setting for 3-4 hours or until cabbage is tender.
