Ingredients
The following ingredients have 4 Servings
- 2 pounds boneless, skinless chicken breasts
- kosher salt, pepper
- 1 tsp chili powder
- 1 tsp garlic powder
- 1 tsp paprika
- 1/2 tsp cumin
- 1 7 oz can chipotle in adobo sauce
- 2 Tbsps water
- 1 10 oz can Rotel tomatoes
- 1 cup ranch dressing
- Optional: fresh cilantro for garnish
Instruction
- Put the chicken in the slow cooker. Sprinkle the kosher salt, pepper, chili powder, garlic powder, paprika, and cumin over top.
- Put the chipotle peppers in adobo sauce into a blender or food processor with 2 Tbsps water. Blend until smooth and spoon it over the chicken in the slow cooker.Note: Chipotle peppers are spicy, to decrease spice remove and discard a few of the peppers if desired.
- Add the can of rotel tomatoes over top and turn the slow cooker on low for 6 to 8 hours.
- Add the ranch dressing and shred the chicken with two forks right in the slow cooker. Add the cilantro if desired and use the chicken as a filling for tacos, nachos, burritos, or serve with Mexican rice.
