Ingredients

The following ingredients have 9 Servings
  • 3 pound beef chuck roast
  • 1/2 cup beef broth
  • 1/3 cup chopped Chipotle peppers and 1 tablespoon of the sauce they're in
  • 1 large onion (chopped)
  • 6 garlic cloves (minced)
  • 1 10 ounce can diced tomatoes and green chiles
  • 1 4 ounce can diced green chiles
  • 2 teaspoons cumin
  • 2 tablespoons brown sugar
  • 8-10 hamburger buns
  • 8-10 slices of cheese (We use Pepper Jack)

Instruction

  • Place all ingredients except roast, buns, and cheese in your slow cooker. Stir to combine.
  • Season beef roast with salt and pepper. Place beef roast in the slow cooker, and spoon some of the mixture on top.
  • Cook on Low for about 8 hours.
  • Remove roast from slow cooker.
  • Shred beef. Then return to Crock Pot and stir to incorporate.
  • Serve on buns topped with cheese.
