Ingredients
The following ingredients have 4 Servings
- 1/4 cup chili powder
- 1 tablespoon coriander seed (ground)
- 1 1/2 teaspoons cumin
- 1 tablespoon coarse kosher salt
- 2 1/2 lbs. pork tenderloin (cut into 2 pieces)
- 1/4 cup fresh lime juice
- 2 cups chicken broth
- 4 cloves garlic (sliced)
- 3/4 cup cilantro (chopped)
Instruction
- Prepare pork; mix chili powder, coriander seed, ground cumin, and salt in a large, shallow bowl. Roll the pork in the chili mixture, making sure to coat the entire pork loin.
- Add the pork loin to a slow cooker. Pour in chicken broth and lime juice, add the sliced garlic and ½ cup chopped cilantro.
- Cover and cook on low for 6-7 hours.
- Once pork is done cooking, remove from the slow cooker and place onto a cutting board or serving plate. Shred pork by pulling apart using two forks. Add the pork back into the slow cooker and stir it in the juices, add the remaining ¼ cup cilantro and stir once again. Ready to serve or set the slow cooker on warm, until ready to serve.
