Ingredients

The following ingredients have 4 Servings
  • 3 boneless, skinless chicken breasts (about 1 lb.)
  • 1 cup onion (diced)
  • 1 1/2 cups carrotts (peeled and diced)
  • 1 cup red pepper (diced)
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 tsp rosemary
  • 1/2 tsp dried thyme
  • 1 12 oz. can diced tomatoes
  • 6 cups chicken broth
  • 1 cup cheese tortellini
  • salt and pepper (to taste)

Instruction

  • Add chicken to slow cooker.  
  • Add in all remaining ingredients except for cheese tortellini
  • Cook on high for 3 hours or low for 6 hours.  Remove chicken and shred.  Return chicken to slow cooker and add cheese tortellini.  Cook for an additional 30 minutes and serve.  
  • Season with salt and pepper to taste
