Ingredients

The following ingredients have 4 Servings
  • 4 lb chicken thighs
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 tablespoon olive oil
  • 1 container (8 oz) refrigerated prechopped onion
  • 1 cup dried apricots
  • 1/2 cup golden raisins
  • 2 cinnamon sticks
  • 1 3/4 cups Progresso™ chicken broth (from 32-oz carton)
  • 1/4 cup honey
  • 1/2 teaspoon ground turmeric
  • Hot cooked couscous, if desired
  • Chopped fresh cilantro, if desired
  • Slivered almonds, if desired

Instruction

  • Spray 4- to 5-quart slow cooker with cooking spray. Sprinkle chicken with 1/2 teaspoon of the salt and the pepper. In 12-inch skillet, heat oil over medium-high heat. Cook half of the chicken in oil 6 minutes, turning once, until browned. Place in slow cooker. Repeat with remaining chicken.
  • Add onion, apricots, raisins and cinnamon sticks to slow cooker. In medium bowl, mix broth, honey, turmeric and remaining 1/2 teaspoon salt with wire whisk until blended. Pour into slow cooker.
  • Cover; cook on Low heat setting 7 to 8 hours or until chicken is tender. Remove cinnamon sticks. Serve chicken mixture over couscous. Garnish individual servings with cilantro and almonds.
