Ingredients

The following ingredients have 4 Servings
  • 14 oz. coconut milk
  • 1/2 cup water
  • 1/4 cup Thai Red Curry Paste
  • 2 Tbsp sugar
  • 1 tsp fish sauce
  • 1 1/2 tsp ginger (minced)
  • 3 tsp lemon juice
  • 4-5 red potatoes (skinned and quartered)
  • 2 lb. skinless, boneless chicken thighs (or breasts)
  • 1/2 cup roasted peanuts
  • cilantro (for garnish)

Instruction

  • Mix together coconut milk, water, curry paste, sugar, fish sauce, ginger and lemon juice
  • Add chicken  and potatoes into slow cooker and cover with sauce
  • Cook on low for 4-5 hours.  Salt to taste.
  • Break chicken into smaller pieces.  I don't shred it.  Add in peanuts and serve over rice.  Garnish with cilantro
