Ingredients
The following ingredients have 4 Servings
- 14 oz. coconut milk
- 1/2 cup water
- 1/4 cup Thai Red Curry Paste
- 2 Tbsp sugar
- 1 tsp fish sauce
- 1 1/2 tsp ginger (minced)
- 3 tsp lemon juice
- 4-5 red potatoes (skinned and quartered)
- 2 lb. skinless, boneless chicken thighs (or breasts)
- 1/2 cup roasted peanuts
- cilantro (for garnish)
Instruction
- Mix together coconut milk, water, curry paste, sugar, fish sauce, ginger and lemon juice
- Add chicken and potatoes into slow cooker and cover with sauce
- Cook on low for 4-5 hours. Salt to taste.
- Break chicken into smaller pieces. I don't shred it. Add in peanuts and serve over rice. Garnish with cilantro
