Ingredients

The following ingredients have 4 Servings
  • 600g chicken thigh fillets, quartered
  • 1 large onion, finely chopped
  • 2 cloves garlic, crushed
  • 2cm piece ginger, finely chopped
  • 2 green chillies, finely chopped
  • 400ml tin coconut milk
  • 1 tbsp tomato purée
  • 2 tsp cumin seeds
  • 2 tsp ground coriander
  • 1 tsp mild chilli powder
  • ½ tsp smoked paprika
  • 2 tsp ground turmeric
  • coriander, a handful of leaves, chopped
  • cooked rice, to serve
  • roti or naans, to serve

Instruction

  • Heat the slow cooker to high. Put all the ingredients except the coriander, rice and breads in the slow cooker. Stir well, then put on a lid and cook for 4 hours. Season, stir in the coriander and serve with rice and breads.
