Ingredients

The following ingredients have 4 Servings
  • 2 pounds boneless, skinless chicken breasts
  • 1 Tbsp chili powder
  • kosher salt, pepper
  • 1 packet dry ranch seasoning
  • 1 onion (diced)
  • 2 jalapeno peppers (seeds removed and minced)
  • 4 cloves garlic (minced)
  • 1 cup buffalo wing sauce
  • 2 10 oz cans Rotel Tomatoes with Green Chiles
  • 2 14 oz cans chicken broth
  • 8 oz cream cheese
  • Optional toppings: shredded cheese and Fritos

Instruction

  • Place the chicken in the slow cooker. Season with chili powder, kosher salt, pepper, and the packet of dry ranch seasoning.
  • Add the diced onions, minced jalapenos, garlic, buffalo wing sauce, Rotel, and chicken broth. Give it a stir and turn it on low for 6 to 8 hours.
  • 30 minutes before serving, shred the chicken with two forks right in the slow cooker. Add the cream cheese. Stir a few times until the cream cheese is melted and evenly combined.
  • Top with shredded cheese and Fritos if desired.
