Ingredients

The following ingredients have 4 Servings
  • 1 medium red potato, (diced)
  • 2 cups shredded cooked chicken
  • 1 pound pulled pork
  • 1 medium sweet onion, (chopped)
  • 1 garlic clove, (minced)
  • 1 1/2 cups frozen lima beans
  • 1 1/2 cups frozen corn
  • 1 1/2 cups frozen sliced okra
  • 1 cup BBQ sauce, (I use Sweet Baby Rays)
  • 4 cups chicken broth
  • 1 tablespoon Worcestershire sauce
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon crushed red pepper flakes
  • 1/4 teaspoon dried thyme
  • 1 (8-ounce) can tomato sauce
  • 1 (14-ounce) can diced tomatoes, (undrained)

Instruction

  • Place the potato in a microwave-safe bowl and microwave for 3 to 4 minutes or until partially cooker. Note: This step is necessary because potatoes take a much longer time to cook in the slow cooker than the other ingredients.
  • Combine all ingredients in a 6-quart or larger slow cooker. Stir to mix.
  • Cover and cook on LOW for 5 hours.
