Ingredients
The following ingredients have 4 Servings
- 3 lb boneless tip roast
- 1 large onion (chopped)
- 3 cloves garlic
- 8 potatoes (peeled and quartered)
- 3 stalks celery
- 8 carrots (peeled, cut into 1" pieces)
- ½ tsp smoked paprika
- 1 tsp black pepper
- ½ tsp cumin
- ¼ tsp chili powder
- 1 Lipton® onion soup packet
- 1 10.5 oz can cream of mushroom soup
- 1 1/2 cups beef broth
- 1 10 oz can Rotel®
- 1 15 oz can whole kernel corn (drained)
Instruction
- In a 6-8 quart slow cooker, add onions, garlic, potatoes, carrots and celery.
- In a small bowl, add seasonings and then rub onto roast.
- Place roast on top of vegetables.
- Sprinkle onion soup packet on top of roast.
- Next add mushroom soup, beef broth and Rotel®
- Cook on high 8 hours or low 12 hours.
- Add corn in the last hour of cooking.
