Ingredients

The following ingredients have 4 Servings
  • 3 lb boneless tip roast
  • 1 large onion (chopped)
  • 3 cloves garlic
  • 8 potatoes (peeled and quartered)
  • 3 stalks celery
  • 8 carrots (peeled, cut into 1" pieces)
  • ½ tsp smoked paprika
  • 1 tsp black pepper
  • ½ tsp cumin
  • ¼ tsp chili powder
  • 1 Lipton® onion soup packet
  • 1 10.5 oz can cream of mushroom soup
  • 1 1/2 cups beef broth
  • 1 10 oz can Rotel®
  • 1 15 oz can whole kernel corn (drained)

Instruction

  • In a 6-8 quart slow cooker, add onions, garlic, potatoes, carrots and celery.
  • In a small bowl, add seasonings and then rub onto roast.
  • Place roast on top of vegetables.
  • Sprinkle onion soup packet on top of roast.
  • Next add mushroom soup, beef broth and Rotel®
  • Cook on high 8 hours or low 12 hours.
  • Add corn in the last hour of cooking.
