Ingredients

The following ingredients have 4 Servings
  • 1 pound lean beef stew meat
  • 1 onion (medium, coarsely chopped)
  • 2 tablespoons chili powder
  • 2 teaspoons cumin
  • 30 ounces black beans (cans, drained)
  • 2 bay leaves
  • 4 cups beef broth (low-sodium)
  • 1 teaspoon kosher or sea salt
  • 1/2 teaspoon black pepper (to taste)
  • 1 potato (large, cubed)
  • 2 carrots (diced)
  • 1 tablespoon extra virgin olive oil

Instruction

  • Add all ingredients to the slow cooker, cover, and cook on low 6-8 hours or high 3-4.
