The following ingredients have 4 Servings
- 1 pound lean beef stew meat
- 1 onion (medium, coarsely chopped)
- 2 tablespoons chili powder
- 2 teaspoons cumin
- 30 ounces black beans (cans, drained)
- 2 bay leaves
- 4 cups beef broth (low-sodium)
- 1 teaspoon kosher or sea salt
- 1/2 teaspoon black pepper (to taste)
- 1 potato (large, cubed)
- 2 carrots (diced)
- 1 tablespoon extra virgin olive oil
Instruction
- Add all ingredients to the slow cooker, cover, and cook on low 6-8 hours or high 3-4.
