Ingredients
The following ingredients have 4 Servings
- 2 x 400g tins red kidney beans (drained and rinsed)
- 1 large onion (finely diced)
- 1 green pepper (diced)
- 1 stalk celery (diced)
- 2 cloves garlic (crushed)
- 120 g chorizo sausage (sliced)
- 1 tsp. salt
- 1/2 tsp. freshly grated pepper
- Pinch chilli flakes
- 2 tbsp. tomato paste
- 500 ml chicken stock
- 100 g basmati rice (uncooked)
Instruction
- Place all the ingredients except the rice into slow cooker.
- Stir well.
- Cook on low for 5 hours. Stirring occasionally. Add more water if necessary.
- Half an hour before the end of cooking stir in the rice. Continue to cook and stir until rice is cooked. Add more water if required.
- Once cooked season to taste and serve.
