Ingredients

The following ingredients have 4 Servings
  • 2 x 400g tins red kidney beans (drained and rinsed)
  • 1 large onion (finely diced)
  • 1 green pepper (diced)
  • 1 stalk celery (diced)
  • 2 cloves garlic (crushed)
  • 120 g chorizo sausage (sliced)
  • 1 tsp. salt
  • 1/2 tsp. freshly grated pepper
  • Pinch chilli flakes
  • 2 tbsp. tomato paste
  • 500 ml chicken stock
  • 100 g basmati rice (uncooked)

Instruction

  • Place all the ingredients except the rice into slow cooker.
  • Stir well.
  • Cook on low for 5 hours. Stirring occasionally. Add more water if necessary.
  • Half an hour before the end of cooking stir in the rice. Continue to cook and stir until rice is cooked. Add more water if required.
  • Once cooked season to taste and serve.
