The following ingredients have 6 Servings

  • 600 grams cubed lamb shoulder
  • 40 grams plain flour (seasoned with salt and pepper)
  • 600 grams lamb ribs ((optional))
  • 2 large onions (halved and finely sliced)
  • 1 tbsp smoked paprika
  • 350 ml lamb stock
  • 1 pinch saffron threads
  • 1 cinnamon stick
  • 100 grams dried apricots (chopped)
  • 1 kg fresh broad beans
  • Shetland sea salt (to taste)
  • freshly ground black pepper (to taste)
  • fresh coriander leaves (to garnish)
